The debate on this one is ....is it rice or pasta?
Officially it’s pasta but the debate is similar to what came first, the chicken or the egg? Often with no conclusion.
Truth be told, it really doesn’t matter. It’s a fantastic dish served cold, hot, along side any meats, a salad, a dollop of Greek yogurt or on its own!
Ingredients
2 Cups Orzo Pasta
5 Cups Warm Water
1 Tbsp Olive Oil
1 Tin Chopped Tomatoes
1 Large Diced Onion
1 Vegetable Stock
1.5 Tsp Salt
Method
Heat the olive oil on a low heat and soften the onion. Once soft, add the tomatoes, vegetable stock and salt.
Add the water and pasta, cooking on a medium heat for approximately 20 minutes. Stir frequently as to avoid sticking to the saucepan.
It is here you can season further if needed.
Remove from heat, cover with a towel and place a lid on top. Leave to stand for at least 10 minutes to allow all the sauce to be absorbed.
Tips
Remove the salt and it makes for a great baby food!
